Should composers like Nobuo Uematsu, Jeremy Soule, and others get more credit, or is it still seen as "just for games"? What impact do you think recognizing this genre would have on the broader music scene?

A lot of video game creators and developers integrate their own sound tracks and songs, that should be globally recognised by the much industry. I agree with you on this. killamch89 1

And some of them are very good such as Vergil's theme from DMC 5: Bury The Light. I'd go as far as to say it's probably the best videogame theme song I've ever heard.
