Favorite Builds For Dark Souls

I've gotten the sudden urge to replay the Dark Souls series and I'm going to take myself up on it. I want to know what are your favorite builds and why?

Personally, I have a thing for The Havelmom build which is similar to the infamous Giant Dad build. I love it for it's packaged with better survivability.
