To me, both versions of the game look pretty similar. I haven't played the new update - Beyond - yet, but I've seen the trailer and I played the first version a lot. I'm kinda intrigued by it. As Beyond is free DLC, I'm glad Hello Games has managed to win back some fans following the controversy of its original incarnation.

I’m playing Risen 3: Titan Lords at the moment on PS4 and Triangle as jump, Square for roll and X as attack is mind boggling to me. The controls are definitely an annoying area in this specific game.

From what you've said, I think you should go for the OG Switch, personally. That said, if you were looking to primarily play it in portable mode, I'd opt for the Switch Lite. Both have their pros and cons.
